Preheat the oven to 425 degrees. In a casserole dish that has been lightly rubbed with oil, lay out chicken breast pieces. Season with salt and pepper. Place a dollop of pesto on each piece of chicken. Spread the pesto out over top. Top with sliced tomatoes, then mozzarella cheese. Place in the oven and bake for 20-25 minutes or until chicken is cooked through. Serve over brown rice with a side of broccoli.
Plant-based: Used pressed, firm tofu instead. Look for vegan pesto. Swap out mozzarella for vegan cheese shreds or nutritional yeast.
Kid-friendly: Use marinara sauce instead of pesto.
