In a small bowl, mix together hummus, chipotle in adobo, scallions, lime juice, salt and pepper. Lay out a tortilla and spread a thin layer of hummus mixture on half of the tortilla. Sprinkle shredded chicken on top of the hummus and fold the tortilla over so it is shaped like a semi-circle. Repeat with remaining tortillas. In a large, dry skillet over medium heat place your quesadillas in and toast for 3-4 minutes per side or until the tortilla is crisp. Repeat with remaining quesadillas.
Plant-based: Use black beans instead of chicken
Kid-friendly: Leave out the chipotle in adobo.
Gluten-free: Use gluten-free tortillas
Pair with: Leftover greens from Seasonal Salad.
