Pierce the potatoes with a fork. On a microwave safe plate, place potatoes in the microwave and cook for 12 minutes, flipping halfway through. If potatoes still aren’t tender, cook an additional 1-2 minutes. While the potatoes are cooking, heat a little bit of olive oil over medium-high heat. Add in the bell peppers and saute for 4-5 minutes until tender crisp. Season with salt and pepper and remove from the pan. Add the marinara sauce to the pan and warm through right before potatoes are done. Preheat the broiler. On a broiler safe sheet pan cut potatoes down the middle, going about ¾ of the way through and open like a book. Top with marinara sauce, bell peppers, shredded mozzarella and pepperoni. Broiler 2-3 minutes or until cheese is melted and pepperoni starts to crisp. Remove from the oven and top with basil and arugula.
Plant-based: Omit pepperoni, use vegan cheese shreds.
Gluten-free: Check pepperoni for gluten containing ingredients.
Kid-friendly: Make it a pizza bar and let them top their own potatoes with their favorite ingredients.
Add spice: Sprinkle on some crushed red pepper flakes.
