Put sweet potatoes into a bowl and microwave for 6-8 minutes or until soft enough to mash with a fork.
While the potatoes cook, in a saute pan over medium heat, add a little bit of olive oil and the onions. Cook low and slow for about 10 minutes or until caramel in color. Push onions to the side and add in the black beans and chicken. Season with salt and pepper and heat through. Set aside.
Add a little bit of chipotle in adobo (you can always add more later, this stuff is hot!), salt and pepper to the sweet potatoes. Mash until desired consistency.
Lay out a tostada shell, spread on the sweet potato, followed by the caramelized onions, black beans, chicken, and cheese. Warm in the microwave to melt cheese, then top with lettuce and salsa. Repeat with remaining shells.
Plant-based: Use vegan cheese shreds instead of cheddar.
Kid-friendly: Scale back on the chipotle if they don’t love the hot stuff.
Side option: Add a Mexican style bagged salad
