In a bowl, toss together chickpeas, rotisserie chicken, green apples, coleslaw mix, scallions and BBQ sauce together. Divide mixture among collard green leaves. Drizzle with yogurt ranch and roll them up. Serve with store bought potato or macaroni salad.
Plant-based: Omit the chicken and add some chilled quinoa. Use vegan ranch.
Gluten-free: Choose potato salad over macaroni.
Kid-friendly: Use a whole wheat tortilla instead of the collard wrap. Add BBQ chicken and cheese to the tortilla, then warm it up in the microwave. Serve with a side of apples and coleslaw drizzled with ranch.
