My philosophy is simple: I believe what we consume is everything—from the foods we put in our body, to the ideas we feed for our minds, to the connections we have with others. Everything gives you energy, and what you take in determines how your life will be. My goal is to champion a healthy lifestyle that is simple, accessible, and gives your body what it needs to fuel your best life possible.
Prep: 15 min
Cook: 30 min
Cook oven fries to package directions.
Preheat the oven to 400 F. Place peppers on a baking pan and bake for 15 minutes or until tender.
While the peppers are cooking, in a large saute pan over medium-high heat add a little bit of olive oil followed by the sirloin steak. Season with salt and pepper. Cook, stirring frequently for about 5 minutes or until a nice golden crust starts to form on steak. Add in mushrooms and onions. Cook for an additional 3-4 minutes or until steak is cooked to your liking and veggies are tender.
Fill your peppers with some of the steak and veggie mixture then top with a slice of provolone cheese. Place back into the oven for 10 minutes or until the cheese is melted and golden brown. Serve with oven-fries.
Plant-based: Use vegan cheese slices instead of provolone. Use black beans instead of steak.
Gluten-free: Check oven-fries for gluten containing ingredients.
Kid-friendly: Serve the steak and cheese in a pita or wrap.
