Preheat the oven to 400 F. In a large saute pan, heat a little olive oil over medium-high heat. Add in ground beef, season with salt, pepper and chili powder and break up with a spatula. Cook, moving frequently until the beef is cooked through and well browned. Drain off any excess fat and set aside. Meanwhile, cook sweet potato cubes in the microwave until soft. Lay tortillas out on a parchment lined sheet tray. Top each tortilla with ground beef and cooked sweet potatoes. Bake for about 10 minutes or until warmed through. Remove from the oven and top each taco with red onion, cilantro and tomatillo salsa. Serve with Mexican rice.
Plant-based: Use vegan crumbles or black beans instead of beef.
Add spice: Top each taco with some pickled jalapenos.
Kid-friendly: Make little quesadillas if tacos are too messy to eat.
