Preheat the oven to 375. Lay bacon on a foil lined sheet tray and bake for 15 minutes or until crispy. Drain on a paper towel and crumble.
While the bacon bakes, place the sweet potatoes on a microwave safe plate. Pierce with a fork several times and then cook on high for 8-10 minutes, flipping halfway through. If the sweet potato isn’t tender, cook for an additional one minute at time until cooked through.
While sweet potato cooks, place saute pan over medium-low heat and add a little bit of olive oil. Add in the beans and season with salt and pepper. Cook until heated through.
Split the sweet potato down the middle without going all the way through. Mash the flesh and top with beans, salsa, mozzarella cheese, avocado and bacon. Repeat with remaining sweet potatoes.
Plant-based: Use vegan cheese shreds. Omit the bacon and use a smoky salsa.
Add something green: Top with arugula, scallions, or pico de gallo.
Kid-friendly: Make one half of the sweet potato the recipe listed and the other half mash with cinnamon and top with their favorite berries and a dollop of yogurt.
Add Spice: Use a hot salsa or add pickled or fresh jalapenos to the top of your sweet potato.
