Preheat the oven to 375 F. On a large sheet pan, toss the mushrooms and asparagus on with a little bit of olive oil, salt and pepper. Roast for 8 minutes or until the veggies are tender. Set aside to cool slightly. Add the shredded carrots and bell pepper to the sheet tray and toss everything together with just enough balsamic vinaigrette to coat. Lay out a tortilla, layer up arugula and balsamic veggies in the center. Fold in the sides and roll up the tortilla like a burrito. Repeat for remaining wraps. Toss coleslaw mix with yogurt ranch. Serve alongside wraps.
Plant-based: Use vegan ranch instead of yogurt ranch.
Gluten-free: Use gluten-free tortillas
Kid-friendly: Make them a pb&j wrap. Serve their favorite veggies alongside yogurt ranch to dip.
Hearty eater: Add shredded rotisserie chicken to the wraps.
