Directions:
Cook beans, rice and steamer broccoli according to package instructions.
Lay out your tortillas. Top half of each with some shredded cheese, add broccoli florets, season with a little salt and pepper and top with a little more cheese. Fold the tortilla over. Heat a large non-stick pan over medium heat, add two quesadillas to the dry pan. Toast on both sides for about 2-3 minutes or until just golden and the cheese is melted. Repeat with remaining quesadillas. Cut into wedges and serve with your favorite salsa and a side of rice and beans.
Plant-based: Use vegan cheese shreds instead of shredded cheddar.
Gluten-free: Use gluten-free tortillas.
Kid friendly: Serve salsa on the side for dipping or swap it out for yogurt ranch.
Meat-eater in the Group: Add shredded chicken or cooked ground beef to the quesadilla before toasting and melting cheese.
