Cook: 45 min
Preheat the oven to 350 F. In a very large bowl beat the eggs with milk, brown sugar, vanilla extract and cinnamon for about 2 minutes. The mixture should thicken slightly.
Spray a 9×13 baking dish with cooking spray or rub with a little olive oil. Toss the bread cubes in with the egg mixture. Let soak for 15 minutes. Pour mixture into prepared baking dish. Bake for 45 minutes or until egg mixture is set.
Divide among serving dishes. Optional to top with strawberries, maple syrup, and powdered sugar if you’d like.
Plant-based: Substitute the eggs and milk for 2 cups dairy free milk, 2 tbsp ground flaxseeds and 2 tbsp cornstarch. Whisk together and let sit for 5 minutes before adding bread.
Gluten-free: Use hearty gluten-free bread.
Quick-prep: Make up to 12 hours ahead and just keep in the fridge. It will be ready when you are and only gets better with time.
