Preheat the oven to 375 F. In a roasting pan, add in olive oil, chili oil and garlic pasta. Stir to combine. Throw in the cherry tomatoes, season with salt and pepper and toss with oil mixture. Roast in the oven for 25 minutes.
After placing tomatoes in the oven, put a pot of water on for pasta. When there is 10 minutes left on tomatoes, drop your pasta and cook to package directions. Reserve about ¼ cup pasta water.
Add pasta water to roasted tomatoes right as it comes out of the oven. Use a wooden spoon or spatula to break up any bits on the bottom of the roasting dish. Toss pasta with sauce.
Serve and top with basil.
Meat-eater in the group: Brown up some Italian chicken sausages and serve alongside.
Gluten-free: Use gluten-free pasta or bean-based.
Kid-friendly: Scale back on the chili oil or omit completely for a mild roasted tomato sauce.
