Heat up your panini press or wait until paninis are assembled and heat a large dry saute pan over medium heat. Lay down the bottom half of your ciabatta bread, layer on the salami, red onion, steamed broccoli, lemon zest, a little drizzle of olive oil, salt, and the shredded cheddar cheese. Top with the top half of the bread. Repeat with remaining sandwiches. Place in the panini press or in a saute pan. Cook until both sides are toasted and the cheese is melted. Serve with baked chips.
Plant-based: Leave out the salami, add extra veggies such as sliced tomatoes or avocado, omit cheddar cheese and use vegan cheese shreds.
Gluten-free: Use your favorite gluten-free bread. Check salami for gluten-containing ingredients.
Kid-friendly: Use their favorite deli meats to make a cheese and meat panini and serve broccoli on the side.
