Preheat the oven to 350 F. Lay out a piece of parchment paper or foil large enough to fold over the ingredients and crimp shut. Place ⅓ lb shrimp down first then top with ¼ of the lemon slices, 1 cup green beans, and ¼ of the cherry tomatoes. Drizzle with a little bit of olive oil and season with salt and pepper. Repeat with remaining shrimp and veggies. Fold the parchment or foil over and crimp the sides to make a pouch. Place pouches on a sheet pan, put in the oven and bake for 12 minutes. Unwrap the pouches and sprinkle with basil. Serve with brown rice.
Plant-based: Use chickpeas instead of shrimp.
Add spice: Sprinkle red pepper flakes over shrimp.
Quick-prep: Buy shrimp already peeled and deveined
Kid-friendly: Use chicken tenders instead of shrimp and use their favorite veggies.
