In a large saute pan, add a little bit of olive oil over medium high heat. Add in the ground turkey. Season with salt, pepper and chili powder. Continue to saute until no longer pink and cooked through. Drain off excess fat. Add in the black beans and heat through. In a serving bowl, layer brown rice, turkey and black bean mixture, shredded lettuce, tomatoes, shredded cheddar cheese and salsa.
Plant-based: Use mixed beans instead of turkey. Use vegan cheese shreds.
Add spice: Top the bowl with pickled jalapenos.
Kid-friendly: Let them help build their bowl and put their favorite toppings on or add ingredients on top of tortilla chips for nachos.
