● 4 salmon filets
● ½ cup soy sauce
● 2 Tbsp brown sugar
● ¼ tsp red pepper flakes
● 1 garlic clove, minced
● 1” piece of fresh ginger, minced
● 1 steamer bag broccoli florets
● 1 jar sesame seeds
● 1 package microwave brown rice, cooked to package directions
Preheat the oven to 425F.
In a medium bowl, combine the soy sauce, minced ginger, red pepper flakes, garlic, and brown sugar. Once combined, add salmon and broccoli to the bowl and evenly coat with the soy sauce mixture, then lay out flat over the sheet pan. Roast in the oven for 15 minutes. While salmon is roasting, cook broccoli steamer bag in the microwave. Serve over brown rice and top with sesame seeds.
Plant-based: Swap salmon for firm tofu. Be sure to press the tofu, prior to adding it to the soy sauce mixture.
Gluten-free: Use a gluten-free soy sauce.
Kid-friendly: Swap salmon for chicken breast.
Quick Prep: Use microwaveable rice pouch and ginger paste instead of chopping up fresh.
