Prick the sweet potatoes with a fork. Place on a plate and microwave for 6 minutes, flipping halfway through- or until tender.
In a small bowl, mix together tahini, lemon juice, salt, pepper and enough water to make it a drippy consistency. It will take a minute to come together.
In a saute pan, heat a little bit of olive oil over medium-high heat. Add in chickpeas, chili powder, some of the cilantro, salt and pepper. Cook until heated through.
Carefully, open up your sweet potatoes. Top each with chickpeas, a generous drizzle of tahini sauce and more cilantro.
Meat-eater in the group: Add shredded rotisserie chicken in with the chickpeas.
Kid-friendly: Use shredded chicken instead of chickpeas. Leave the sauce on the side for dipping. Or sprinkle their potatoes with cheese and serve with their favorite fruit.
Add something green: Saute some kale with olive oil, salt and pepper and add to the sweet potato with the chickpeas.
