In a small bowl, mix together soy sauce, ginger, garlic and cornstarch. Set aside.
In a large, high-sided saute pan, heat a little bit of olive oil over medium-high heat. Add in the stir fry veggies and a splash of water and saute for 5-6 minutes or until tender crisp. Add in the chickpeas and heat through. Season with pepper. Reduce the heat to medium and add the soy sauce mixture. Cook for 30 seconds to 1 minute or until sauce has thickened and heated through. Divide basmati rice among serving bowls. Top with stir fry and sliced scallions.
Meat-eater in the group: Add shredded rotisserie chicken in with the chickpeas.
Gluten-free: Use tamari instead of soy sauce.
Kid-friendly: Use their favorite veggies. Substitute chicken if they don’t love chickpeas or serve with a side of cooked-from-frozen egg rolls or potstickers .
Add spice: Add a spoonful of sambal or sriracha into the soy sauce mixture.
