In a large saute pan over medium-high heat, pour in a little bit of olive oil and add in shrimp. Season with salt and pepper and any other of your favorite seasonings. Cook for 1-2 minutes per side or until shrimp is firm and opaque. Set aside.
In a large bowl, toss together the mixed greens, apples, red onion and some of the pomegranate seeds with the balsamic vinaigrette. Divide among salad plates and top with more pomegranate seeds, wonton strips, feta cheese and shrimp.
Plant-based: Use chickpeas instead of shrimp and nutritional yeast instead of feta.
Kid-friendly: Pull out the ingredients they love and add into a pita or tortilla.
Gluten-free: Use gluten-free tortilla chips instead of wonton strips
Quick-prep: Buy shrimp already peeled and deveined
