Preheat the oven according to the package directions on chicken fingers and fries. Place chicken fingers onto a sheet pan. On a separate sheet pan toss together the oven fries, peppers, onions and a little bit of olive oil and spread out into an even layer. Cook in the oven according to package directions.
Cut sub rolls down the middle but not all the way through. Spread a little bit of yogurt onto a roll (this is acting as your mayo), then layer in shredded lettuce, ¼ of roma tomato slices and 3 chicken fingers. Repeat with the remaining rolls. Serve with oven fries.
Plant-based: Use plant-based chicken fingers. Substitute Greek yogurt with a dairy-free version.
Gluten-free: Use gluten-free rolls.
Kid-friendly: Use their favorite veggies, cut into smaller pieces and serve with fruit.
