In a large bowl, mix together ground beef, chili powder, salt and pepper. Divide into 4 sections to create 4 hamburger patties.
In a large frying pan over medium-high heat, add a little bit of olive oil and place your burgers in the pan. Be sure to leave a little room between the burgers so they brown and don’t steam. Cook for 3 minutes per side for medium. Remove from the heat and set aside.
In a clean, large bowl, toss together the romaine hearts, roma tomatoes, red onion and shredded cheese. Pour the lime juice, a little olive oil, salt and pepper over the salad and toss to coat. Divide among serving dishes, top with the burger, salsa, broken tostada shells and guacamole.
Plant-based: Use veggie burgers and vegan cheese shreds.
Add spice: Add pickled jalapenos to the salad or use hot chili powder in the burgers.
Kid-friendly: Serve their burger and salad in a whole wheat tortilla.
