In a large saute pan, add olive oil and butter over medium – medium high heat. When butter is melted add the salmon and zucchini. Season both with salt and pepper. Cook salmon for 3-4 minutes on the first side. Move zucchini around frequently.
Flip the salmon and cook for another 3-4 minutes. Turn heat to medium low, add garlic and lemon juice and lemon zest to the pan. Cook an additional one minute without letting garlic burn. Serve salmon with zucchini alongside.
Plant-based: Use pressed and drained firm tofu instead of salmon.
Add spice: Add red pepper flakes during seasoning.
Kid-friendly: Use their favorite protein instead of salmon.
