Preheat the oven to 400 F. On a large sheet pan, place shrimp in ⅓, asparagus and onion in ⅓ and sausage in the last ⅓ of the pan. Sprinkle Old Bay seasoning, salt and pepper over everything. Drizzle olive oil over everything. Toss each ⅓ separately to combine. Top the shrimp with lemon slices. Roast in the oven for 10 minutes or until shrimp is cooked through. Sprinkle everything with minced parsley.
Plant-based: Use pressed and drained firm tofu cubes instead of shrimp and chickpeas instead of sausage.
Hearty-eater: Pair with some leftover bread or microwave rice.
Kid-friendly: If they aren’t a fan of shrimp, use cut up chicken breast. Use their favorite veggie
