Preheat the oven to 425 F. In an ovenproof skillet, over medium heat, add in a little bit of olive oil. Add the garlic and cook for about 30 seconds. Add in the marinara sauce and bring to a simmer. Add in feta, shrimp, herbs, salt and pepper. Bake in the oven, uncovered for 10-12 minutes or until shrimp is cooked through. Serve on top of toasted whole grain bread with a side of bagged salad mix.
Plant-based: Use chickpeas instead of shrimp and vegan feta or firm tofu, pressed and drained instead of feta.
Gluten-free: Use gluten-free bread, pasta or brown rice instead.
Kid-friendly: Use crisped up chicken sausage if your kiddo doesn’t like shrimp. Mozzarella can be sprinkled at the end to replace feta.
