In a large pot, over medium-high heat, add a little bit of olive oil. Add in the onion, bell pepper and jalapeno. Saute for 5-6 minutes or until lightly browned and tender. Add in sweet potato, salt and pepper and stir. Add in chili powder and cook for an additional 1-2 minutes. Add in beans, some crushed tomatoes and vegetable stock and bring to a boil. Reduce the heat to medium-low, cover and let simmer for 10 minutes. Remove the lid and cook for an additional 10 minutes.
While the chili simmers, cook the fries to package directions. Divide fries among serving plates. Top with chili, shredded mozzarella and some of the diced sweet onions.
Plant-based: Use vegan cheese shreds instead of mozzarella.
Meat-eater in the group: Add in some shredded rotisserie chicken about 5 minutes before chili is done simmering.
Kid-friendly: Leave chili on the side for dipping.
Serving suggestion: Top fries with a mix of greens, lime juice, and cilantro.
