Cut avocados in half, remove the pit, and scoop out the insides into a bowl. Add salt and pepper then gently mash the avocados with a fork until it reaches a spreadable consistency. Spread the avocado mixture evenly among the baguettes, then top with tomatoes, chicken, cheese, and basil. Before serving, drizzle each baguette with balsamic glaze and serve alongside a mixed green salad.
Plant-based: Use chickpeas instead of chicken, and use vegan cheese shreds instead of mozzarella.
Kid-friendly: Dice avocado and serve in a wrap with a side of fruit.
Add spice: Add some of the left over chili peppers from the pizza night or sprinkle red pepper flakes over the top of each baguette.
