In a large saute pan, over medium heat, cook bacon, brussel sprouts, a little olive oil, salt and pepper. Cook 10-15 minutes until bacon is crispy and brussel sprouts are tender. While the bacon and brussel mixture is sauteing, cook pierogies to package directions. Divide the brussel sprout mixture onto each plate and top with four pierogies, then drizzle with balsamic glaze.
Plant-based: Use vegan pierogi/ravioli or regular whole grain pasta. Substitute the bacon for tempeh bacon.
Gluten-free: Use gluten-free pierogi or ravioli.
Kid-friendly: Use their favorite veggie and serve with their favorite dipper instead of balsamic.
Quick Prep: Use frozen shredded brussel sprouts or pre shredded brussel sprouts from the produce section.
Cooking Tip: If using fresh brussel sprouts, consider thin slicing on a mandolin for even and fast cuts.
