Preheat the oven to 400 F. Spray a large sheet pan with cooking spray, lay out the chicken and cut through the middle to butterfly it open, season liberally with a little bit of olive oil, salt, pepper and rosemary. Bake for 18-22 minutes or until chicken reaches an internal temperature of 165 F and juices run clear. Remove chicken from the oven and make room for asparagus on the same tray. Toss asparagus with a little olive oil, salt and pepper. Place a couple slices of brie oven chicken and return the sheet pan to the oven for 5-6 minutes or until asparagus is tender and brie is melted. Remove from the oven and serve the chicken alongside the asparagus. Dollop cranberry sauce on top of brie.
Plant-based: Substitute the chicken with pressed and drained firm tofu steaks. Omit the brie.
Add spice: Add a little minced jalapeno pepper to the cranberry sauce.
Kid-friendly: Bake breaded chicken tenders with the brie instead. Serve with their favorite veggie.
