In a large bowl combine lentils, cucumber, red bell pepper, red onion, parsley, salt and pepper and red wine vinaigrette. Chill for 15-20 minutes or up to an hour. Serve in lettuce cups and with wild rice.
Meat-eater in the group: Add in sliced pepperoni or salami to the salad before tossing.
