In a bowl, toss together coleslaw mix, green onion, mango, cucumber, lime juice, salt and pepper. Set aside.
In a saute pan, heat chicken with just enough hoisin to coat. You don’t want it soupy.
Lay out a tortilla, top with hoisin chicken, slaw mix and cilantro. Repeat with remaining tortillas. Serve with quinoa.
Plant-based: Use steamed cauliflower instead of chicken.
Gluten-free: Use gluten-free or corn tortillas
Kid-friendly: Make their tacos hoisin chicken and a little bit of cheese. Serve mango and cucumber matchsticks on the side.
