In a small bowl, mix together yogurt, scallions, parsley, lime juice, salt and pepper. Set aside. Heat your refried beans in a small pot on the stove over medium heat until warmed through. Warm tortillas in the microwave for ten seconds. Lay out your tortillas, layer up refried beans, followed by mozzarella cheese. Roll up your burrito by folding in the sides first and then rolling from the front to back like a log. In a large, dry saute pan heated over medium heat, place your burrito and toast on both sides until golden and crispy. Serve with the herby yogurt dipper and diced tomatoes seasoned with salt and pepper.
Plant-based: Use vegan refried beans and vegan cheese shreds instead of mozzarella.
Gluten-free: Use gluten-free tortillas.
Kid-friendly: Make them into mini burritos by using taco size tortillas.
Add Spice: Add jalapeno to the inside of your burrito or serve hot salsa on the side.
Meat Eater in the Group: Add shredded chicken to the burrito before toasting in the pan.
