In a small bowl, toss together the shredded rotisserie chicken and buffalo sauce. Set aside.
Lay out a tortilla, sprinkle ⅓ cup of shredded cheese on half of it. Top the cheese with ½ cup buffalo chicken mix. Fold the tortilla so it forms a semicircle. Repeat with remaining tortillas.
Heat a large dry skillet over medium heat. Place two quesadillas in at a time and toast for 2-3 minutes per side or until cheese is melted and chicken is heated through. Be sure to keep an eye on the heat and lower if needed.
While quesadillas cook, toss together coleslaw mix, celery, carrots, blue cheese crumbles and yogurt ranch.
Cut each quesadilla into fourths and serve alongside the slaw.
Plant-based: Use slightly smashed chickpeas instead of chicken. Use vegan cheese shreds instead of cheddar. Use vegan ranch instead of yogurt ranch.
Gluten-free: Use gluten-free tortillas.
Kid-friendly: If they aren’t a fan of buffalo try subbing out barbecue sauce instead (or go sauce-less) and serving with their favorite fruit.
