Preheat the oven to 400 F. In a gallon baggie add chicken breasts, 1 tbsp olive oil, and one packet of taco seasoning. Zip the bag closed and massage chicken until coated in seasoning. Once seasoned, line a baking tray with tin foil and lay chicken breasts in a single layer. Bake chicken for 20 minutes flipping halfway through.Once cooked, let rest for 5 minutes then cut into strips. Take your whole wheat tortilla and layer with lettuce, tomato, chicken, cheese and salsa. Top with cilantro, and 1 tbsp greek yogurt. Roll shell into a taco shape and serve with refried beans and brown rice.
Plant-based: Omit chicken, use canned black beans or fresh avocado. Use vegan cheese shreds. Use dairy-free yogurt.
Gluten-free: Use gluten free tortillas, and gluten free taco seasoning.
Kid-friendly: Create a taco bar so they can make their own.
Add spice: Look for “hot” taco seasoning packets or add fresh or pickled jalapenos to your tacos.
