Bring a large pot of water to a boil. Add in the fettuccine and cook to package directions. Set aside.
When you put the pot of water on to boil, on another burner place a large high sided saute pan over medium-high heat. Add in a little bit of olive oil and add the ground turkey. Season with salt and pepper. Cook, breaking up the turkey as you go, until it is cooked through and well browned, about 5-6 minutes. Add in the zucchini and sweet onion and cook until tender, another 4 minutes. Add in the garlic and cook for an additional 30 seconds. Add in the fire roasted tomatoes, reduce the heat to medium low and cover. Simmer for 15 minutes.
Check sauce for seasoning and add salt and pepper as desired. Toss the pasta with the bolognese sauce. Divide among bowls and top with basil.
Plant-based: Use vegan crumbles instead of ground turkey.
Gluten-free: Use gluten-free or bean-based pasta.
Kid-friendly: Saute the zucchini on the side or use their favorite veggie.
Leftover hack: Serve with a green salad for lunch the next day!
