Ingredients:

  • (4) 5 oz salmon filets 
  • 1 cup fresh dill, chopped fine
  • 1 lemon, juiced
  • 1-2 bunches broccoli rabe (or substitute broccolini)
  • 2 cloves garlic, minced fine
  • ¼ tsp red pepper flakes
  • 4 small burrata balls (or sub fresh mozzarella)
  • 1 cup store bought tzatziki

Directions:

Preheat the oven to 425 F. Also, bring a large pot of water to a boil. Line a large sheet pan with foil. Place salmon filets on the pan. Score each salmon filet by lightly slicing about ¼” through the flesh 4-5 times across the filet. Season with salt, pepper and dill. Rub seasoning into scores. Drizzle with olive oil and place in the oven. Bake for 12-15 minutes or until desired doneness. While the salmon bakes, place broccoli rabe in the pot of water and let boil for 3 minutes (only 2 if using broccolini). While that boils, heat a large saute pan over medium heat, add in a little olive oil, garlic and red pepper flakes. When the garlic becomes fragrant, remove broccoli rabe from water, shaking off excess and add to the saute pan. Saute 2-3 minutes and season with salt and pepper and some lemon juice. Plate up salmon, serve broccoli rabe alongside with a chunk of burrata seasoned with salt, pepper and a little olive oil and tzatziki for dipping.
