Brown ground beef in a large stock pot over medium-high heat until there is no more pink. Drain off excess fat. Cook mixed frozen vegetables in the microwave according to package instructions. To the ground beef, add tomato juice, cooked vegetables, beef broth and spices OR 1 packet of dry onion soup mix. Stir well. Let soup begin to bubble, then lower temperature and cook at least 15min. Depending on your preference of soup thickness, add ½ cup of water at a time, up to 2 cups for a thinner soup. Divide among serving bowls.
Plant-based: Use plant-based crumbles instead of ground beef.
