● 4 whole wheat English muffins
● ¼ cup pesto
● 2 cup pizza sauce
● 2 roma tomato, small dice
● 1 cup shredded mozzarella cheese
● Basil, torn into small pieces, for serving
● Arugula, for serving
Toast all English muffin halves in the toaster to each person’s liking before topping. Lay English muffins halves out on a broiler safe sheet tray. Top each half with ¼ C pizza sauce, 2 Tbsp shredded mozzarella cheese, roma tomatoes and basil. Place under the broiler until the cheese is melted and golden. Keep an eye on them, the cheese will brown quickly. Remove from the oven and top with arugula and a dollop of pesto. Serve alongside your favorite vegetable or simple sliced tomatoes seasoned with salt and pepper.
Plant-based: Use vegan pesto and swap shredded mozzarella for nutritional yeast or vegan cheese shreds.
Gluten-free: Use gluten-free English muffins.
Kid-friendly: Omit the pesto and use extra pizza sauce, you can also add mini pepperoni to the top.
