● 2 cups rotisserie chicken, shredded
● 1 can chickpeas, drained and rinsed
● 4 whole wheat pita pockets
● Arugula, for serving
● 1 cup tzatziki sauce
● 2 roma tomatoes, sliced
● ½ cucumber, sliced
● Steamer bag of vegetables
Open the pita pockets and spread ¼ cup tzatziki along the inside of each. Stuff each pita with ½ cup chicken, ¼ can chickpeas, arugula, ½ roma tomato and a few slices of cucumber. Serve alongside steamed veggies.
Plant-based: Leave out the chicken and use extra chickpeas. Swap the tzatziki for hummus.
Gluten-free: Try gluten-free pita or tortillas.
Kid-friendly: Instead of tzatziki, use the child’s favorite salad dressing as a sauce or make a PB&J pita.
