Cook the oven fries to package directions.
While fries bake, in a bowl, add in the hard boiled eggs, Greek yogurt, mayo, dill, chives and dijon mustard and toss gently to combine. Season with salt and pepper. Place in the fridge until fries are done. Lay out a tortilla and top with ¼ of the egg mixture in the center and some spring lettuce mix. Wrap and roll like a burrito. Repeat with the remaining tortillas. Serve with oven fries.
Plant-based: Use drained and rinsed chickpeas instead of eggs. Use tahini or plant-based yogurt instead of dairy yogurt.
Gluten-free: Use a gluten-free tortilla.
Add spice: Add a few dashes of tabasco to the egg salad mix before tossing.
Add Veggies: Add in any extra celery, onion, peppers, or greens you have in the fridge.
