Preheat the oven to 400 F.
Cook steamer bag of broccoli according to package directions.
Lay pita bread out on a sheet pan. Spread with hoisin sauce. Top with shredded mozzarella cheese, rotisserie chicken, red onion, broccoli, and some of the scallions. Bake in the oven for 10 minutes.
While pita pizza bakes, toss together coleslaw cabbage mix, the rest of the scallions and ginger sesame dressing. Remove pizza from the oven, cut into quarters and top each quarter with a little of the cole slaw mix.
Plant-based: Use chickpeas instead of chicken and use vegan cheese shreds instead of mozzarella cheese.
Gluten-free: Use a gluten-free pita bread or tortilla.
Kid-friendly: Make them a classic marinara and cheese pizza and serve salad and veggies on the side.
