In a small bowl, mix together the first 7 ingredients. Set aside.
In a large high sided saute pan or wok, over medium-high heat, add a little bit of olive oil. When the oil is hot, add in the ground beef and season with salt and pepper. Cook, breaking the beef up as you go until it is cooked through and a dark golden brown. Drain off excess fat. Add in the soy mixture and cook for a few minutes until the sauce has thickened up. Remove from the heat.
Spoon Korean Style Beef into the bibb lettuce cups, top with green onions and sesame seeds. Serve with brown rice.
Plant-based: Substitute ground beef for vegan crumbles or canned lentils.
Gluten-free: Use tamari instead of soy sauce.
Want some green: Add some steamed broccoli in before adding in the sauce.
