In a large saute pan, heat olive oil over medium heat. Add garlic and red pepper flakes and saute about 30 seconds. Add in shrimp and cook until opaque, about 2-3 minutes. Toss in parsley and lemon zest. Season with salt and pepper to taste. Serve on a piece of butter lettuce with some wild rice.
