In a small bowl, toss together the tomatoes, cilantro, lime juice, salt and pepper. Set aside.
In a medium skillet, heat up the rotisserie chicken and black beans. Season with salt and pepper.
Microwave your tortillas for 10 seconds. Place one tortilla out in front of you and load up the middle with ¼ of the brown rice, ¼ black beans, ½ cup shredded chicken, ¼ of the tomato mixture, mixed greens and ¼ cup cheddar cheese. Fold over the side and roll up like a log. Repeat with the remaining tortillas.
Plant-based: Omit chicken. Use vegan cheese shreds instead of cheddar cheese.
Gluten-free: Use gluten-free tortillas
Kid-friendly: Make them mini burritos with their favorite ingredients.
