In a large skillet, heat a little bit of olive oil over medium-low heat. Add in garlic, cook for 1 minute or until fragrant. Add red pepper flakes, spinach, salt and pepper. Cook until spinach is well wilted. Push the kale off to one side and add in the peppers and onions. Add in a touch more olive oil if needed. Cook for about 4-5 minutes or until the peppers and onion start to soften and brown. Push all the veggies over to one side and add in the sausage. Cook on both sides until heated through. Keep an eye on the veggies and move around as needed.
Place the wilted spinach into the pita , followed by the sausage, then the peppers and onions and finally the giardiniera. Serve with an optional side of fresh cut fruit.
Plant-based: Use a veggie sausage instead of chicken sausage.
Gluten-free: Use a gluten-free pita or omit bread and serve chicken sausage mixture over brown rice.
Add spice: Buy the hot giardiniera or top with pickled hot peppers.
Kid-friendly: Chop sausage up and serve veggies separately with a side of fruit.
