Preheat the oven to 400 F.
On a large sheet pan, toss together the onion, zucchini, eggplant, cherry tomatoes, garlic, thyme, salt, pepper and enough olive oil just to coat. Nestle the sausage among the veggies. Bake for 15-20 minutes. Top with fresh basil. Serve sausages with veggies.
Plant-based: Use plant-based sausages instead of chicken.
Kid-friendly: Serve sausages with a side of ketchup and use their favorite veggies or toss with pasta and a little marinara sauce.
Add spice: Use hot Italian sausages instead of sweet.
Serving suggestion: Serve with quick-cooking polenta as a base or cut up sausages and toss with pasta.
