In a bowl, mix together ground turkey, salt and pepper until well combined. Divide into quarters and mold four burgers. Heat a large saute pan over medium heat, cook the burgers for 5 minutes per side or until cooked all the way through, they should be 165 F in the center. Top with one slice of cheese and set aside.
In a non-stick skillet, over medium-low heat, add a little bit of oil. Crack the eggs into the pan, season with salt and pepper and cover for about 2-3 minutes or until whites are just set. If not fully cooked, add 1 tbsp water to the pan and cover, this will help steam the whites.
Place one half of the english muffin down, top with arugula, followed by the burger, then the egg, and finally the other half of the english muffin.
Plant-based: Use a veggie sausage patty instead of ground turkey. Skip the egg and use vegan cheese shreds instead of cheddar.
Gluten-free: Use gluten-free english muffins or buns.
Add spice: Add a few dashes of hot sauce to your eggs.
Pair With: Raw veggies, chips, or bagged salad.
