In a large pot, heat a little olive oil over medium-high heat. Add in the diced onions, green bell peppers and jalapeno. Saute for 5-6 minutes or until lightly browned and tender. Add in chili powder, salt and pepper, stir to combine. Add in cannellini beans, chicken and chicken broth, bring to a boil, then reduce the heat and simmer for 20 minutes. Divide among serving bowls and top with scallions. Serve with tortilla chips crushed on top.
Plant-based: Replace the chicken and add extra veggies such as diced zucchini when you saute the onions, bell peppers and jalapeno.
Add spice: Leave the seeds in the jalapeno when you mince it for extra heat.
Kid-friendly: Leave out the jalapeno and put chips on the side for dipping.
