Preheat the oven to 400 F. On a large sheet pan place your pita bread in a single layer. Top each pita with BBQ sauce, chicken, red onions and mozzarella. Bake for 10 minutes or until the cheese is melted and ingredients are hot. Top with scallions.
Plant-based: Use cauliflower florets instead of chicken, and swap out fresh mozzarella for nutritional yeast or vegan cheese shreds.
Gluten-free: Use gluten-free pitas or tortillas.
Add spice: Add sliced pickled jalapenos to the pizza along with the chicken and onions.
Kid-friendly: Have them help make the pizza and add their favorite toppings.
