Preheat the oven to 400 F. On a sheet pan put bell peppers, onions, and tomatoes, toss with a little olive oil and season with salt and pepper. Roast for 10-12 minutes or until veggies start to brown.
In a large skillet, heat a little bit of olive oil over medium-low heat. Add in garlic, cook for 1 minute or until fragrant. Add red pepper flakes, spinach, salt and pepper. Cook until spinach is well wilted. Remove from the pan and set aside.
On one slice of bread, layer spinach, peppers, onions, tomatoes and mozzarella cheese. Top with another slice of bread. Toast in a panini press or on a large dry skillet until golden brown on both sides and gooey in the middle.
Plant-based: Remove the cheese or swap out for vegan cheese shreds.
Gluten-free: Use your favorite gluten-free bread instead of whole grain.
Quick prep: Use frozen bell peppers and onion mix.
Kid-friendly: Leave out or add in the toppings they love.
