Preheat the oven to 375 F. In a large sauté pan, heat a few teaspoons of olive oil over medium-high heat. Add in the ground turkey and start to brown. Add the onion and garlic until veggies are softened and turkey is cooked through and browned. Season with salt and pepper. In a large bowl, mix together turkey mixture, rice, enough marinara sauce to coat and some of the pepper jack cheese. Line the bell peppers up in a casserole dish. Fill each pepper with the mixture. Top with more shredded cheese. Bake for 30 minutes or until peppers are tender.
Plant-based: Swap ground turkey for canned or cooked brown or green lentils. Omit the cheese.
Add spice: Add red pepper flakes into the turkey mixture while cooking.
Kid-friendly: Bake turkey and rice mixture in a small, individual baking dish. Serve roasted peppers on the side to try.
